What's Happening at CorkyCellars?

Week of June 27, 2009 - What's Happening at CorkyCellars?

THIS WEEK'S TASTING - SATURDAY JUNE 27 - 11 am until 6 pm

We will be featuring a couple of Roses since the weather is looking a little sunny! And also a Washington Chardonnay and two French reds. More fun to mix it up a little. ^^^^^^^^ The first Rose will be a TAVEL - CUVEE VICTORIA ROSE - $17.99 - by Andrieux $ Fils. Blended of Grenache and Cinsault, the grapes have been hand-harvested and fermented in stainless steel tanks. Fresh flowers and fruit in the nose, with a crisp, layered palate that is beautifully complex. Perfect with salmon, or just summer.

Then CHATEAU BEL AIR PERPONCHER RESERVE ROSE - $15.99 - From Cabernet Sauvignon, this blew everything else out of the water in a recent distributor tasting. There are juicy red fruits, cherries, plums and raspberries, given dimension with a squeeze of lemon. A wine with superb balance, finesse and elegance.

The Washington Chardonnay is GILBERT CELLARS ESTATE RESERVE - $20.99 - A Wine Spectator 90 pointer! Aged for 10 months in French oak, this Chardonnay from the Doc Stewart estate vineyard offers bountiful tree fruit flavors and subtle vanilla undertones. Bright acidity gives this wine the flexibility of pairing with creamy dishes or seafood, while battonage (lees-stirring) brings the wine a soft, lingering finish that caps off an intense yet balanced sensory experience.

Next we move into the French reds: CHATEAU DE BELLEVUE ANJOU ROUGE - $10.99 - Made from Cabernet Franc, with a nose full of cherries, blackcurrant and raspberry. Velvety smooth, with a wonderfully subtle and round character, with silky tannins on the finish. Will improve with age for 7 - 10 years.

And, BAD BOY THUNEVIN ("Mauvais Garcon") - $29,99 - Another 90 pointer from Spectator. - This cuvee from leading garagiste Jean-Luc Thunevin is a blend of 95% Merlot and 5% Cabernet Franc, from vines at least 40 years old in a great terroir of clay and limestone. At such a great value, this wine should please wine lovers as much, if not more, than an expensive wine. The nose is full of blackberry, black cherry, black pepper, and black olives. These "black" notes follow through on the palate, where notes of cassis, smoke and minerals also emerge. Full bodied with a silky texture and loaded with ripe chewy tannins, this wine is a pure, delicious offering.

FRIDAY NIGHT TASTING - 4 pm until 6:30 pm

Join us this Friday as we explore a Cava Rose from Agusti Torello. Notes from their website: Appearance: A clean and bright attractive rose coulour of a cherry shade with a medium intensity and lively reflections of violet. Fine and persistent bubbles that evolve abundantly forming a consistent rosary and dense crown. Aroma: Forward and fresh on the nose with a strong presence of wild fruit, particularly strawberry against a background of mint. Taste: Pleasant attack. The sparkle is well integrated, rich and dense. As it develops it shows its varietal character, simultaneously fresh and complex, meaty yet light, with a marked presence of red forest fruit and a touch of strawberry. Final Impression: Pleasant, fresh and well balanced. Good structure with a well integrated sparkle. Pleasant aftertaste of medium intensity where the aromas of the mouth and nose repeat and harmonise. Gastronomy: Ideal as an apertif. Suitable with larger shellfish and sea food prepared with sauces, paella, fine pasta, cold cuts, white meats, fruit and light creamy desserts.

The varietal used for this Cava is TREPAT so it is one that we can add to the list for different grapes on our journey to 100! TREPAT, indigenous speciality of the Conca de Barbera and Costers del Segre regions in north east Spain. About 3,700 acres are used mainly for light roses. (Guide to Wine Grapes)

The other wine for tasting will be SEVEN DAUGHTERS white blend. The winery says: Seven Daughters is a blend of seven carefully chosen grapes crafted into a crisp and refreshing wine. Like you and your friends getting together - all different and yet so perfect together! Enjoy this wine on its own or with light pasta, sushi or Thai dishes.

The seven varietals are: French Colombard 24%, Chardonnay 19%, Riesling 17%, Symphony 17%, Orange Muscat 11%, Gewurztraminer 6% and Sauvignon Blanc 6%.

WHAT'S NEW?

Just arrived B. R. COHN Vinegars. We brought in four of their line up and hope that you enjoy them as much as we do.

PEAR CHARONNAY VINEGAR - Fresh and crisp, with just a hint of sweetness. This can be used for sprinkling over flavorful greens such as arugula, spinach or dandelion: in salads containing fresh fruit or chreamy cheese such as Gorgonzola or goat cheese: combine with olive oit to make dipping oil or vinaigrette. Made from Chardonnay & Pinot Noir grapes combined with natural pear juice.

CHAMPAGNE VINEGAR - Inviting bouquet and the crisp flavor of champagne with floral qualities, balanced tartness, and restrained wine character. Woodsy notes underscore the beautifully balanced acidity. Use as an alternative in recipes calling for white wine viegar: splach over freshly steamed vegetables for vibrant flavor: deglaze a pan after sauteing salmon: use in seafood salads, fruit salads and on lighter greens, like bib lettuce.

15 YEAR OLD BALSAMIC VINEGAR FROM MODENA - Meets the criteria for a "true" balsamic made from the famous Trebiano grape, grown and produced in Modena, Northern Italy. It is crafted in the "tradizionale" method, aged for 15 years in a succession of small oak, cherry, mulberry, chestnut and juniper wood barrels and bottled in California. Spice up tomato sauces: use it as a marinade for lamb or beef: sprinkle on grilled or roasted vegetables right after cooking: wonderful over fresh mozzarella cheese with tomatoes and basil.

25 YEAR OLD BALSAMIC VINEGAR FROM MODENA - Full bodied vinegar with pleasing caramel flavors and syrup like consistency. Drizzle it over fresh fruit and berries for a caramel-like flavor: serve on vanilla ice cream for a delightful indulgence: toss with fresh Parmigiano Reggiano and salad greens. YUMMY!!!!

WHAT'S BACK IN STOCK?

If you have been looking for the Gruner Veltliner we have the BERGER back. - $13.99 - This light, refreshing white makes an excellent introduction to Gruner Veltliner. An excellent value that's an easy pairing for a wide array of foods, Berger Gruner Veltliner has a pleasant acidity, a delicious palate of citrus and stone fruits, and a hint of minerality. This is a one liter with the Crown Cap.

OWEN ROE'S SHARECROPPERS CABERNET - regular $20.99 now $15.99 - Owen Roe Sharecroppers Cabernet 07 has smoky blackberry and dark cherry aromas that leap out, signaling the showiness of this young Cabernet. Packed with juicy black fruit flavors--especially cassis--this is a big mouthful of Cab, with dried herbs and earth on the slightly chewy finish. David O'Reilly strikes again: great value, great wine. 100% Cabernet Sauvignon, David O'reilly describes this as a very concentrated wine with flavors of cassis, blackberry, and a hint of juniper. The yield was down for the 2006 vintage, meaning less wine, but a more concentrated wine. Made from Elerding and Alderdale Vineyards in the Yalkima Valley, there's also a bit of Red Willow Vineyard fruit in the wine. The wine is ready to drink, and David says: "It will blow you away". (winemakers notes)

The WALLA WALLA SWEET ONION MUSTARDS are restocked. ORIGINAL - use to jazz up a simple white sauce by adding a bit. When cooking green peas, add a small can of mushroom slices, heat and drain then add a teaspoon of mustard and a small handful of sliced almonds and serve. WITH ROASTED GARLIC - Beat 2 tbls with 1/2 cup buttermilk - dip chicken pieces into this mix before covering with flour before frying. Instead of butter and cream add a scoop for superb garlic mashed potatoes. WITH HORSERADISH - make a really wonderful seafood sauce by mixing equal parts of this mustard with tomato ketchup. Believe it or not - it is absolutely the best flavoring (along with your mayo) when making coleslaw.

PEPPER SPRINGS DIP MIXES are back also. Roasted Garlic, Artichoke Parmesan, Dilliest Dill, Fiesta Spinach, Manana Mexican and a new one Dilly Horseradish.
